The secret behind Sierra Azuaga’s Ibérico products: zero emissions—but not in the way you might think.
From the source to the table: here is how Sierra de Azuaga ensures its Ibérico products achieve the "zero emissions" certification backed by AENOR.
If there is one product that defines us (Spanish) as a nation, it is Iberian ham: because of the intensity of its flavor, the passion with which it is crafted, and the joy of sharing it during special moments. This ham is something that connects us to tradition, yet even today, also embodies the vision of what we can become.
While its flavor remains unchanged, its production has evolved; an increasing number of brands in the ham industry are committing to zero-emission manufacturing processes. Enjoying a fine Iberian ham is not just about taking care of ourselves— but also about caring for everything else.
What does the "Zero-Emission Product" label mean?
This seal certifies AENOR’s (Spanish Association for Standardization and Certification) endorsement of products that have measured, reduced, and offset their entire environmental impact.
This is a label that is not awarded lightly: it requires that the entire process — from initial production to the moment the ham reaches the table — be precisely controlled and measured.
To achieve this, Campodulce and Sierra de Azuaga follow a three-phase product Life Cycle Analysis:
We calculate the product's actual carbon footprint from start to finish.
We reduce emissions through renewable energy and the planting of high-quality timber trees.
We offset emissions via certified environmental projects, thereby closing the loop of responsible management from beginning to end
A seal, a statement of intent.
As consumers, one specific criterion is increasingly influencing our purchasing decisions: the real impact brands have on the planet. We are fortunate to live in a land that produces a ham which is unique in the whole world and, precisely for that reason, we have a responsibility to set an example by choosing the best possible options.
Seals such as the "zero emissions" certification are more than just a technical accolade; they are proof that a product's prestige is no longer measured solely by its flavor, but also by the footprint it leaves — or, indeed, the footprint it no longer leaves — behind it.
